NOURISHING CHICKEN SOUP

Everything you need in a family meal -simple, flavorful, and ready in just 30 minutes! Packed with six nourishing veggies and a rich, comforting broth, it's perfect for everyone, from babies to adults. The secret ingredient? A perfectly ripe tomato that ties all the flavors together.

This soup is a family favorite for a reason. Once you try it, you'll find yourself making it again and again!

Ingredients:
  • 32 oz chicken, veggie, or bone broth/stock 
  • 1 whole chicken (cut into pieces; see prep instructions below)
  • 1 bunch fresh parsley
  • 1 onion, diced
  • 1 leek, chopped
  • 1 large carrot, peeled and diced
  • 1 large tomato, peeled (yes, peel the tomato—trust me!) and diced
  • 1 large potato, peeled and diced
  • 1 celery stalk, chopped
  • 1 turnip, peeled and diced
  • salt (to taste)
  • optional: 1/2 lb pasta noodles

Method:

Prep the chicken: Cut the whole chicken into pieces (breasts, thighs, drumsticks, and wings). You can include the carcass in the pot for added flavor or set it aside for another use.

Prepare the base: Set a large pot over medium heat. Fill the pot 3/4 full with the broth or stock and water. Add the parsley and the prepared chicken pieces.

Prep the veggies: While the pot heats, wash the celery and leek. Peel the onion, carrot, tomato, and turnip. Chop or dice all the vegetables.
Skim the foam: When the chicken begins to boil, skim off the foam that forms on the surface.

Add vegetables and cook:
 Add all the vegetables to the pot. Season with salt to taste. Let it simmer until the chicken is cooked to an internal temperature of 155–160°F, about 10–15 minutes. For accuracy, use a meat thermometer to check the chicken.

Rest the chicken: Remove the chicken from the pot and let it rest for 5 minutes. This allows it to finish cooking to a safe internal temperature of 165°F.

Cook the vegetables: Let the vegetables continue to simmer for an additional 10–15 minutes.

Blend the soup: Using an immersion blender or a traditional blender, puree the soup until smooth.

Add noodles (optional): If using noodles, bring the soup to a boil, add the noodles, and cook for 5–7 minutes or until tender.

Shred the chicken: Remove the skin from the chicken, shred the meat, and add it back into the soup.

Serve and enjoy: Serve the soup into bowls and enjoy warm!
